There are many kinds of food enzyme preparations in China, among which carbohydrate enzymes, protein enzymes and dairy enzymes account for a large proportion, accounting for 81.7%. The commonly used enzyme preparations in food processing mainly include papain, transglutaminase, elastase, lysozyme, lipase, glucose oxidase, isoamylase, cellulase, superoxide dismutase, bromelain, fig egg white enzyme, ginger protease, etc.
The enzyme preparations approved for use in the food industry in China are α- Amylase, glucoamylase, immobilized glucose isomerase, papain, pectinase β- Glucanase, grape oxidase α- Acetyllactate deaminase is mainly used in fruit and vegetable processing, baking, dairy processing and so on.
The amylase industry has developed rapidly, the output has doubled, and the varieties have gradually increased. By 2006, the output has exceeded 5 million tons. The residual protein content of starch and the gelatinization characteristics of starch in enzymatic wet grinding process are better than those in traditional wet grinding process. The addition of protease not only shortened the soaking time, but also improved the yield of protein. New enzyme preparations are being used in the production of injection glucose, liquid glucose syrup, high maltose syrup, fructose syrup and various oligosaccharides. Starch sugar instead of sucrose has been used in food processing, candy, beer and beverage production.

In the 1980s, textile enzyme preparations represented by amylase, protease and cellulase were mainly used for fabric desizing, denim finishing and silk degumming. They were widely used in industry and also represented the rise of textile biotechnology. After entering the 21st century, the application fields of enzyme preparations in China's textile industry have gradually expanded, including fiber modification, raw hemp degumming, printing and dyeing pretreatment, printing and dyeing wastewater treatment, garment processing and other fields. At present, the processing technology of textile enzyme preparation has involved almost all textile wet processing fields, and the market scale is increasing steadily.
Feed industry

Feed enzyme preparation is a new type of feed additive with the continuous development of feed industry and enzyme preparation industry in recent years. It can improve nutrient digestibility, improve the quality stability of compound feed and reduce environmental pollution. As a kind of green feed additive with high efficiency, non toxicity, no side effects and environmental protection, feed enzyme preparation has become the fastest growing and strongest part of the world's industrial enzyme industry, and its application effect has been recognized all over the world. Chinese feed enzyme preparations have been added to feed since 1980s.
At present, there are more than 20 kinds of feed enzymes in China, mainly including amylase, protease, xylanase β- Mannanase, cellulase β- Glucanase, phytase and complex enzyme, etc. These enzyme preparations can be divided into two categories: 1) they mainly degrade polysaccharides and biological macromolecules, including protease, lipase, amylase, glucoamylase, cellulase, xylanase and mannanase. The main function is to destroy the plant cell wall and fully release the cell contents; 2) To degrade phytic acid β- Glucan, pectin and other anti nutritional factors, mainly including phytase β- Glucanase and pectinase, whose main function is to degrade xylan in cell wall and pectin in intercellular matrix and improve feed utilization.
